I am so cheating today. Wanna know what we just ate?
Feel free to whip this up at home.. I just invented it and then Schoon slaved away making it..
LaLa’s Lush Lamb Salad.
Pan fry some lamb (cubed or strips) in a dash of olive oil and some freshly crushed garlic.
Add finely chopped onions and mushrooms and then a dash of chilli, mixed herbs, cracked pepper and rosemary.
Cook cook cook.
When the meat and stuff is cooked squeeze the juice of one lemon over the top and let sit. Don’t worry about seeds, extra fibre. I would have squeezed the lemon in earlier and let it cook a bit in the juice, but Schoon forgot so I have not tested that theory yet.
In the meantime, you will have made a mixed salad of rocket (or rugala or rucola, whatever you want to call it) celery, avocado and tomato.
In the other meantime you will have finely chopped some cucumber and mixed it in a bowl with a small tub of natural low-fat yoghurt, some cracked pepper and sea salt and a dash of olive oil.
Mix, mix, mix.
Serve salad, pop meaty bits on and DRIZZLE the yoghurty mix on top.
It’s shit good.
